Spicy Black Bean Burgers

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • 1/4 small onion, diced
  • 1 small carrot, grated
  • 2 garlic cloves, minced
  • jalapeno pepper (optional)
  • 1 (15 ounce) can black beans, drained
  • 1/4 cup saltine crumbs
  • salt
  • pepper
  • cumin
  • dried chipotle powder

Recipe

  • 1 saute onion, carrot, and jalapenos in a little oil, until softened. add garlic and saute until garlic is soft.
  • 2 add salt, pepper, cumin, and chipotle powder and cook another minute or two longer.
  • 3 combine vegetables and beans in a bowl, and mash with a fork.
  • 4 add cracker crumbs and mix thoroughly.
  • 5 form into 4 patties.
  • 6 coat the bottom of a large skillet with oil and heat over medium high heat.
  • 7 fry the patties until they are brown and a little crunchy.
  • 8 i like these wrapped in tortillas, with a little lettuce and cheese on top.
