E-z Roast Chicken

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • Servings: 5
  • 2 1/2-5 lbs chicken
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large onion, halved
  • 1/2 teaspoon sage
  • 1/2 cup water

Recipe

  • 1 preheat oven to 325°f.
  • 2 remove giblets/neck from chicken cavities.
  • 3 rinse chicken and pat dry.
  • 4 rub softened butter all over chicken.
  • 5 sprinkle outside of chicken with salt and pepper.
  • 6 sprinkle 1/4 tsp salt and 1/2 tsp of sage inside the chicken.
  • 7 place onion inside chicken.
  • 8 place chicken in roasting pan breast side up.
  • 9 add 1/2 cup water to pan.
  • 10 loosely tent breast with aluminum foil.
  • 11 cook for 25 minutes per pound.
  • 12 (3 lbs= approx 1 1/2 hours; 5 lbs= approx 2 1/2 hours).
  • 13 remove chicken to a warm platter and let rest for 15 min to distribute the juices.
