E-z Roast Chicken

Ingredients
- Servings: 5
- 2 1/2-5 lbs chicken
- 4 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 large onion, halved
- 1/2 teaspoon sage
- 1/2 cup water
Recipe
- 1 preheat oven to 325°f.
- 2 remove giblets/neck from chicken cavities.
- 3 rinse chicken and pat dry.
- 4 rub softened butter all over chicken.
- 5 sprinkle outside of chicken with salt and pepper.
- 6 sprinkle 1/4 tsp salt and 1/2 tsp of sage inside the chicken.
- 7 place onion inside chicken.
- 8 place chicken in roasting pan breast side up.
- 9 add 1/2 cup water to pan.
- 10 loosely tent breast with aluminum foil.
- 11 cook for 25 minutes per pound.
- 12 (3 lbs= approx 1 1/2 hours; 5 lbs= approx 2 1/2 hours).
- 13 remove chicken to a warm platter and let rest for 15 min to distribute the juices.
