Spinach Mushroom Salad

Ingredients
- 1 lb fresh spinach
- 1/4 lb fresh mushrooms, sliced
- 3 hard-boiled eggs, chopped
- 1 bunch green onion, chopped
- 1/2 cup olive oil
- 5 tablespoons wine vinegar
- 1/3 cup sugar
- 1/4 teaspoon dry mustard
- 1/8 teaspoon pepper
- 8 slices bacon, cooked and crumbled
- 1/2 cup blue cheese, crumbled
Recipe
- 1 remove stems from spinach, wash leaves thoroughly and pat dry.
- 2 combine spinach, mushrooms, eggs, and green onions in large bowl.
- 3 combine oil, vinegar, sugar, and seasonings in a jar or salad dressing mixer. shake vigorously.
- 4 top salad with dressing just before serving and toss gently.
- 5 garnish with bacon and bleu cheese.
