Super Sautéed Summer Squash

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 large vidalia onion, chopped
  • 6 yellow squash, sliced into 1/2 inch slices
  • 1 large tomato, chopped
  • 2 garlic cloves, finely chopped
  • 1 teaspoon red pepper flakes
  • 1 tablespoon chopped fresh basil
  • salt

Recipe

  • 1 in a large skillet heat the olive oil over med heat. add the onion, squash, garlic and tomato and sauté for 10 minutes, or until tender.
  • 2 add the red pepper flakes, basil and salt and remove from heat.
  • 3 serve with parmesan if desired.
