Four Onion Relish

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 leeks
  • 3 scallions
  • 2 large walla walla onions
  • 2 large red onions
  • 5 tablespoons unsalted butter
  • 1/2 teaspoon sugar
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon minced fresh rosemary
  • salt and pepper

Recipe

  • 1 cut leeks, scallions, and all onions into 1/4inch dice.
  • 2 stir fry in butter over medium-high heat until liquid has evaporated, about 10 minutes.
  • 3 sprinkle with sugar, vinegar, rosemary and salt and pepper to taste.
  • 4 continue stir frying until onions begin to brown at edges.
  • 5 serve warm or at room temperature.
