E's Duck Gumbo

Ingredients
- Servings: 10
- 1 cup cooking oil
- 1/2 cup flour
- 1 cup chopped onion
- 1/4 cup chopped green onion
- 3 quarts boiling water
- tabasco sauce
- salt
- red pepper
- 2 large duck breasts, sliced
- 1/4 cup chopped parsley
- 1/2 cup chopped green onion top
- 2 cloves garlic
- 1/2 lb smoked sausage, sliced
- 2 cups cooked rice
Recipe
- 1 heat 1/2 cup of the oil over medium heat in a large heavy pot.
- 2 add the flour, stirring constantly until dark brown.
- 3 add the onion and green onion and cook until tender.
- 4 add the boiling water and season with tabasco, salt& red pepper.
- 5 season the duck with salt& red pepper.
- 6 heat the remaining oil in a skillet& brown the duck pieces.
- 7 transfer the duck to the gumbo.
- 8 simmer, uncovered on low 2-2 1/2 hours.
- 9 add the sausage slices, green onion tops and parsley.
- 10 cook 30 minutes longer.
- 11 serve over hot rice.
