Dynamite Brown Rice Salad

Ingredients

  • Servings: 4
  • 2 cups cooked short-grain brown rice, cooled
  • fresh dill, gently plucked
  • fresh parsley, gently plucked
  • 1 raw fresh ear of corn, scaled
  • 1 carrot, finely chopped
  • 1 large scallion, chopped
  • 2 lemons, juice of
  • salt and pepper
  • all purpose seasoning, i use simply organics
  • lemon
  • olive oil

Recipe

  • 1 mix all ingredients in a bowl. refrigerate till serving.
