Down Home Crab Cakes
Ingredients
- Servings: 4
- 1/2 cup mayonnaise
- 1 egg, beaten
- 1/3 cup green bell pepper, minced
- 3 tablespoons onions, minced
- 1/3 cup corn kernels, cooked
- 1 teaspoon dry mustard

- 1 lb lump crabmeat, drained and flaked
- 2 cups fresh breadcrumbs
- 2 tablespoons butter
- 2 tablespoons vegetable oil
Recipe
- 1 combine mayonnaise and egg in a large bowl.
- 2 add green pepper, onion, corn, mustard and pepper stir in crabmeat and 1 1/2 cups bread crumbs, or enough to hold mixture together.
- 3 shape into 8 patties and coat with remaining bread crumbs.
- 4 heat oil and butter in a large skillet. add crab cakes, in batches, and fry until lightly browned on both sides.
- 5 serving ideas : serve with your favorite tartar sauce
