Double-onion Smashed Potatoes

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs small red potatoes, quartered
  • 3 tablespoons butter
  • 1/2 cup red onion, chopped
  • 1/2 cup shallot, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper

Recipe

  • 1 in large pot, combine potatoes with enough salted water to cover.
  • 2 bring to boil; cook until tender, 20 minutes.
  • 3 drain; return to pot.
  • 4 meanwhile, in skillet, melt 1 t butter over medium heat.
  • 5 add onion and shallots, cook stirring, until tender, 5 minutes.
  • 6 remove from heat; stir in parsley.
  • 7 reserve.
  • 8 in microwave-safe bowl, microwave milk and remaining butter on high 30-60 seconds until hot.
  • 9 add milk mixture, salt and pepper to potatoes; mash.
  • 10 reserve 2 t onion mixture, stir remainder into potatoes.
  • 11 serve potatoes topped with reserved onion mixture.
