Double-onion Smashed Potatoes

Ingredients

- 1 1/2 lbs small red potatoes, quartered
- 3 tablespoons butter
- 1/2 cup red onion, chopped
- 1/2 cup shallot, chopped
- 2 tablespoons fresh parsley, chopped
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
Recipe
- 1 in large pot, combine potatoes with enough salted water to cover.
- 2 bring to boil; cook until tender, 20 minutes.
- 3 drain; return to pot.
- 4 meanwhile, in skillet, melt 1 t butter over medium heat.
- 5 add onion and shallots, cook stirring, until tender, 5 minutes.
- 6 remove from heat; stir in parsley.
- 7 reserve.
- 8 in microwave-safe bowl, microwave milk and remaining butter on high 30-60 seconds until hot.
- 9 add milk mixture, salt and pepper to potatoes; mash.
- 10 reserve 2 t onion mixture, stir remainder into potatoes.
- 11 serve potatoes topped with reserved onion mixture.
