Double-dipped Spicy Chicken

Ingredients

- vegetable oil
- 1 1/2 cups flour
- 1 teaspoon paprika
- 1 teaspoon poultry seasoning
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon allspice
- 1 cup buttermilk
- 1 lb boneless skinless chicken thighs
- 1 lb chicken tenderloins
- salt and pepper
Recipe
- 1 heat 1 1/2 inches vegetable oil in a deep skillet over medium high heat.
- 2 a cube of bread should brown in a 40 count when oil is ready.
- 3 set out three disposable pie tins.
- 4 mix flour with paprika, poultry.
- 5 seasoning, cayenne and allspice.
- 6 divide seasoned flour between two tins.
- 7 pour buttermilk into a tin.
- 8 line up tins as such: flour, buttermilk and then flour.
- 9 season chicken with salt and pepper.
- 10 coat chicken in flour, then buttermilk, then a second coating of flour.
- 11 cook chicken 6 minutes on each side,until deep golden brown and firm.
