Easy And Delicious Chicken Piccata

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 chicken breasts (flattened with a mallet)
  • 2 tablespoons vegetable oil
  • 4 tablespoons flour
  • 1/4 cup dry white
  • 1 teaspoon garlic, minced
  • 1/2 cup low sodium chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon capers, drained
  • 2 tablespoons unsalted butter
  • 3 lemons, sliced
  • 4 sprigs fresh parsley

Recipe

  • 1 season chicken breasts with salt and pepper and dust with flour.
  • 2 spray saute pan with nonstick spray and add vegetable oil and heat over medium high heat.
  • 3 saute breasts in 2 tablespoons of vegetable oil for approximately 2-3 minutes, flip over and saute 1-2 minutes and transfer to a warm plate. pour off fat from pan.
  • 4 deglaze your pan with and garlic. cook until garlic is slightly brown and liquid is nearly gone, about 2 minutes.
  • 5 add broth and fresh lemon juice and the capers. return cutlets to pan and cook on each side 1 minute. transfer cutlets to warm plate.
  • 6 finish with butter and lemon slices. once butter is melted, pour over cutlets and garnish with fresh parsley.
