El Chico Fried Ice Cream

Ingredients

- 1 quart vanilla ice cream
- 1 cup corn flake crumbs
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
Recipe
- 1 at least 5 hours in advance: combine crumbs, sugar, and cinnamon in a shallow pan.
- 2 let ice cream soften slightly for 5 minutes.
- 3 make 6 balls of ice cream; roll in crumb mixture until well-coated, pressing coating into ice cream.
- 4 wrap in aluminum foil and freeze for 5 hours.
- 5 heat oil to 450°f.
- 6 unwrap each ball and fry in hot oil very briefly, about 2 seconds.
- 7 place in dessert dish; decorate with toppings, whipped cream, and a cherry.
