Dixie Pineapple Beans

Ingredients

  • Servings: 6
  • 1/4 cup light molasses
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 (16 ounce) cans vegetarian beans
  • 1 (8 ounce) can pineapple chunks
  • 2 tablespoons pineapple juice
  • 1/2 teaspoon lemon juice
  • 1/2 cup pecans, chopped
  • 1 tablespoon light molasses
  • 1 tablespoon butter, melted

Recipe

  • 1 combine 1/4 cup molasses, cinnamon, ginger, nutmeg and salt in a 1 1/2 quart casserole. add beans, pineapple, pineapple juice, lemon juice and 1/4 cup of the pecans. mix well. in cup, combine remaining pecans, 1 tablespoons molasses and butter). spoon around edge of beans (optional). bake at 350 degrees for 40-45 minutes or until beans are bubbly.
