Dixie Pineapple Beans

Ingredients

- 1/4 cup light molasses
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 (16 ounce) cans vegetarian beans
- 1 (8 ounce) can pineapple chunks
- 2 tablespoons pineapple juice
- 1/2 teaspoon lemon juice
- 1/2 cup pecans, chopped
- 1 tablespoon light molasses
- 1 tablespoon butter, melted
Recipe
- 1 combine 1/4 cup molasses, cinnamon, ginger, nutmeg and salt in a 1 1/2 quart casserole. add beans, pineapple, pineapple juice, lemon juice and 1/4 cup of the pecans. mix well. in cup, combine remaining pecans, 1 tablespoons molasses and butter). spoon around edge of beans (optional). bake at 350 degrees for 40-45 minutes or until beans are bubbly.
