Down East Bread

Ingredients
- 2 (1/4 ounce) packages dry yeast
- 1/2 cup lukewarm water
- 1 tablespoon sugar
- 3 cups lukewarm water
- 1/2 cup cooking oil
- 1 egg (beaten)
- 1/3 cup sugar
- 1 tablespoon salt
- 9 cups flour (approximately)
Recipe
- 1 using a large bowl,mix the first three ingredients together and allow to set for 10 minutes.
- 2 add the remaining 3 cups water, oil, egg, sugar, and salt; mix well.
- 3 then add 3 cups of the flour and mix well so the mixture will be smooth.
- 4 then add 3 cups more of the flour, stirring again till smooth.
- 5 keep on adding the flour until the dough is fairly stiff.
- 6 knead 100 times.
- 7 put into a greased bowl and cover to let rise till double.
- 8 punch down and rise again till doubled in size.
- 9 turn a lightly floured board and punch down and let rest for 10 minutes.
- 10 knead for about 3 minutes and divide dough in thirds.
- 11 make each third into a loaf and place in greased bread pan.
- 12 rise till almost double.
- 13 bake at 450 degrees for 10 minutes; lower the heat to 325 degees and bake for about 25 minutes longer.
- 14 if they get too brown, put foil on top.
- 15 take out of pans and put on racks with a clean dish towel over the top.
