Potato, Sour Cream& Chive Quesadillas

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 2 medium potatoes, pealed & cut in small cubes
  • 1/4 cup nonfat sour cream
  • 2 tablespoons chopped chives or 2 tablespoons green onion tops
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup shredded cheddar cheese
  • 4 ten inch tortillas

Recipe

  • 1 boil potatos in water until tender.
  • 2 drain.
  • 3 mash potatoes with sour cream & chives.
  • 4 blend in garlic powder & pepper.
  • 5 divided pototo mixture evenly & spread on 2 tortillias.
  • 6 sprinkle with cheese.
  • 7 cover with remaining tortillias.
  • 8 place in pre heated quesadilla maker one at a time.
  • 9 close lid & cook 3-4 minutes or until lightly browned.
  • 10 remove from pan.
  • 11 slice into 12 peices.
