Dog's Breath Biscuits

Ingredients
- 1/2 cup whole wheat flour
- 1/2 cup white flour
- 1 cup quick oats or 1 large flake rolled oats
- 3/4 cup cornmeal
- 1/4 cup packed brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup butter or 1/4 cup margarine, softened
- 1/3 cup peanut butter
- 2 eggs
- 1/4 cup parsley
- 1/4 cup mint
Recipe
- 1 line rimless baking sheet with parchment paper or grease. set aside.
- 2 in bowl, whisk together the flours, oats, cornmeal, sugar, baking powder and salt.
- 3 in separate bowl, beat butter with peanut butter; beat in eggs, 1 at a time.
- 4 stir in flour mixture, mint and parsley to make a soft dough.
- 5 divide in half; wrap and refridgerate until firm, about 1 hour. (make ahead and refridgerate for up to 2 days).
- 6 on lightly floured surface, roll out dough to 1/2" thickness.
- 7 use a cookie cutter of your choice. i use a small 2" round cutter because i have 2 small dogs.
- 8 arrange on prepared sheets.
- 9 bake 325 degrees until golden and firm -- about 35 - 40 minutes. but i found that for our altitude -- 15-20 minutes does the trick for us.
- 10 transfer to rack; let cool.
- 11 store in airtight container for up to 2 weeks.
- 12 **the serving size is dependent on the size of the cookie cutter you use.
