Easy And Light Chicken Piccata

Ingredients

  • Servings: 4
  • 6 boneless skinless chicken breasts
  • 1/3 cup flour, seasoned with
  • salt and pepper, if you choose
  • 1/4 cup extra virgin olive oil
  • 2 garlic cloves, minced
  • 1/2 cup onion, chopped
  • 1 cup chicken broth
  • 2 tablespoons dried parsley
  • fresh parsley, for garnish
  • 1 lemon, sliced

Recipe

  • 1 prepare flour with salt and pepper if desired.
  • 2 in a large skillet or electric frying pan, heat oil.
  • 3 dredge chicken in flour and lightly brown in oil, with the onion and garlic.
  • 4 cook on low and do not let the garlic get too brown.
  • 5 drain off any oil.
  • 6 add chicken broth and dried parsley.
  • 7 simmer for 5 - 10 minutes.
  • 8 this will thicken in it''s own juices.
  • 9 just before serving, add lemon slices to each piece of chicken and cover for 1 minute.
  • 10 remove immediately and serve over rice or pasta.
  • 11 for more lemon flavor, squeeze lemon into gravy while simmering for the one minute.
