Easy And Fast Bacon Fried Rice

Ingredients
- Servings: 4
- 4 cups cooked white rice, cold
- 1 bunch green onion, sliced thinly
- 6 slices thick bacon, cut into bite sized pieces
- 2 eggs, lightly beaten
- soy sauce
Recipe
- 1 in a large wok or high sided skillet, cook bacon over medium high heat until done.
- 2 remove bacon from pan with a slotted spoon and set aside to drain on paper towels.
- 3 add green onion to bacon grease and cook until tender and slightly translucent.
- 4 add rice to pan and cook until rice is very lightly brown and cooked throughout.
- 5 push rice to the sides and add egg into center of pan.
- 6 quickly scramble cook eggs.
- 7 push rice back into center of pan and mix all thoroughly.
- 8 season with soy sauce to taste.
