Roasted Yam Puree With Brown Butter

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 4 lbs yams (red-skinned sweet potatoes)
  • 1/2 cup butter

Recipe

  • 1 preheat oven to 400°f roast yams until tender when pierced with knife, about 1 hour.
  • 2 cool slightly.
  • 3 melt butter in heavy large skillet over medium heat.
  • 4 cook until butter turns light brown, about 5 minutes.
  • 5 scoop flesh from yams into processor. process until smooth.
  • 6 blend in brown butter.
  • 7 season to taste with salt. (can be made 1 day ahead. cover and chill. rewarm in microwave before serving.).
