- 2 red onions
- 1 cup red wine vinegar
- 1 cup sugar

- 1 slice both red onions into ½ inch thick slices. place vinegar and sugar in a large skillet over medium heat and bring to a simmer. once sugar is completely dissolved, add the onions. cook, stirring occasionally, for twenty minutes until the onions are caramelized and liquid is reduced. set aside to cool.
