Mushrooms Florentine

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 1 lb fresh mushrooms, i like a mixture
  • 1 lb fresh spinach or 20 ounces frozen chopped spinach, cooked slightly
  • 1/4 cup onion, chopped
  • 1/4 cup melted butter or 1/4 cup margarine
  • 1 teaspoon salt
  • 1 cup grated sharp cheddar cheese

Recipe

  • 1 clean mushrooms well, wash and dry.
  • 2 slice off the stems.
  • 3 saute the mushrooms and onions in butter until brown.
  • 4 drain the cooked spinach well and line a casserole with the spinach leaves.
  • 5 spread 1/2 of the mushroom/onion mixture over the leaves, top with cheddar.
  • 6 the next layer again will be mushrooms/onion mixture topped with cheddar.
  • 7 bake this covered at 350* for 20-30 min.
