Mushrooms Florentine

Ingredients
- Servings: 12
- 1 lb fresh mushrooms, i like a mixture
- 1 lb fresh spinach or 20 ounces frozen chopped spinach, cooked slightly
- 1/4 cup onion, chopped
- 1/4 cup melted butter or 1/4 cup margarine
- 1 teaspoon salt
- 1 cup grated sharp cheddar cheese
Recipe
- 1 clean mushrooms well, wash and dry.
- 2 slice off the stems.
- 3 saute the mushrooms and onions in butter until brown.
- 4 drain the cooked spinach well and line a casserole with the spinach leaves.
- 5 spread 1/2 of the mushroom/onion mixture over the leaves, top with cheddar.
- 6 the next layer again will be mushrooms/onion mixture topped with cheddar.
- 7 bake this covered at 350* for 20-30 min.
