Honeydew Basil Nojitos

Ingredients

  • Servings: 8
  • 1/2 cup large fresh basil leaf, torn
  • 1/2 cup lime juice
  • 2 teaspoons granulated sugar
  • 6 lbs honeydew melon, peeled, seeded and cubed
  • lime wedge (optional)
  • superfine sugar (optional)
  • ice cube
  • carbonated water (optional)
  • honeydew balls (optional) or honeydew, spears (optional)

Recipe

  • 1 in a large pitcher combine basil leaves, lime juice, and 2 tsp granulated sugar.
  • 2 using a muddler or the back of a spoon, mash ingredients together well making sure that the sugar is dissolved.
  • 3 set aside.
  • 4 place about 1/4 of the melon cubes in a food processor or blender.
  • 5 cover and process until smooth.
  • 6 press puree through a fine mesh sieve.
  • 7 discard solids.
  • 8 repeat with remaining melon, working with 1/4 at a time.
  • 9 you should end up with 4 cups melon juice total.
  • 10 add melon juice to pitcher.
  • 11 if desired, rub a lime wedge around the rim of eight glasses and dip rim in superfine sugar.
  • 12 fill glasses with ice.
  • 13 pour juice mixture into glasses.
  • 14 if desired, add a splash of carbonated water to each glass.
  • 15 if desire garnish with melon balls or spears.
  • 16 serve immediately.
