Potato Spinach Casserole

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 6 -8 large baking potatoes
  • 10 ounces frozen chopped spinach, defrosted and well drained
  • 1/4 cup butter
  • 1 cup sour cream
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 tablespoons green onions, sliced thinly
  • 1 cup cheddar cheese

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 peel and cut potatoes into small chunks.
  • 3 boil until they are fork tender.
  • 4 mash potatoes.
  • 5 add spinach, sour cream, butter, salt, pepper and green onions.
  • 6 bake in oven for 15 minutes.
  • 7 remove from oven and add shredded cheddar cheese.
  • 8 return to oven and bake until cheese is melted.
