Melon And Champagne Jelly

Ingredients

  • Servings: 10
  • 2 liters cubed watermelon (or combination) or 2 liters cantaloupes (or combination) or 2 liters honeydew melon (or combination)
  • 1 (750 ml) bottle sparkling wine
  • 500 g sugar
  • 1 vanilla bean
  • 2 lemon slices
  • 2 -3 star anise pods
  • 12 gelatin sheets

Recipe

  • 1 place melon cubes in a serving dish, or divide between dishes if using several.
  • 2 measure sparkling wine, sugar and spices into a saucepan and simmer for 20 minutes.
  • 3 soak gelatin sheets in cold water, squeeze dry and dissolve in a small amount of hot wine mixture. add the gelatin-wine mixture to the saucepan gradually, stirring constantly.
  • 4 discard vanilla bean, lemon slices, star anise pods.
  • 5 allow the wine mixture to cool to room temperature. pour over melon cubes. transfer the dessert into the fridge and cool until set.
