Melon And Champagne Jelly

Ingredients
- Servings: 10
- 2 liters cubed watermelon (or combination) or 2 liters cantaloupes (or combination) or 2 liters honeydew melon (or combination)
- 1 (750 ml) bottle sparkling wine
- 500 g sugar
- 1 vanilla bean
- 2 lemon slices
- 2 -3 star anise pods
- 12 gelatin sheets
Recipe
- 1 place melon cubes in a serving dish, or divide between dishes if using several.
- 2 measure sparkling wine, sugar and spices into a saucepan and simmer for 20 minutes.
- 3 soak gelatin sheets in cold water, squeeze dry and dissolve in a small amount of hot wine mixture. add the gelatin-wine mixture to the saucepan gradually, stirring constantly.
- 4 discard vanilla bean, lemon slices, star anise pods.
- 5 allow the wine mixture to cool to room temperature. pour over melon cubes. transfer the dessert into the fridge and cool until set.
