Sauteed Green Beans, Red Bell Peppers And Pine Nuts

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs green beans
  • 1 1/2 tablespoons olive oil
  • 2 medium red bell peppers, seeded,cut into 1/2 inch dice (2 cups)
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup toasted pine nuts

Recipe

  • 1 cook green beans in large pot of boiling salted water until crisp-tender about 4 minutes.
  • 2 drain; rinse with cold water to cool quickly and drain again.
  • 3 heat oil in skillet over medium high heat.
  • 4 add peppers; sauté until just tender, about 5 minutes add butter to same skillet; melt.
  • 5 add garlic; suaté for approx.
  • 6 1 minute.
  • 7 add green beans and sauté until heated through about 5 minutes mix in nuts; season with salt and pepper.
