Moroccan Carrots

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 5 carrots, quartered into sticks
  • 1/4 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon cumin
  • 1 teaspoon cinnamon
  • 3 tablespoons lemon juice
  • 1 teaspoon parsley, chopped
  • 1 teaspoon cilantro, chopped
  • 1 teaspoon basil, chopped
  • 1 tablespoon black olives, sliced

Recipe

  • 1 preheat oven to 450 degrees and prepare a baking sheet with tinfoil.
  • 2 combine carrots, onion, garlic, cumin, and cinnamon in a large bowl; toss well.
  • 3 place mixture in a single layer on the baking sheet and cook for 10 minutes.
  • 4 turn carrots and cook for an additional 5 minutes.
  • 5 after cooking, toss carrots with remaining ingredients until well combined.
  • 6 enjoy!
