Fat Free Lemon Pie

Total Time: 24 mins Preparation Time: 12 mins Cook Time: 12 mins

Ingredients

  • Servings: 8
  • 1 1/2 cups water
  • 8 teaspoons sugar
  • 4 1/2 teaspoons cornstarch
  • 2 eggs
  • 1/3 cup lemon juice
  • 4 egg whites (meringue)
  • 8 teaspoons sugar
  • 1 1/2 teaspoons cream of tartar

Recipe

  • 1 cook all ingredients in double boiler until thickened.
  • 2 pour into pie shell.
  • 3 top with meringue which has been beaten stiff.
  • 4 bake 450f for 15 minutes or until golden brown.
