Microwaved Scalloped Corn

Total Time: 25 mins Preparation Time: 18 mins Cook Time: 7 mins

Ingredients

  • 2 eggs
  • 1 (14 3/4 ounce) can cream-style corn
  • 2/3 cup milk
  • 1/2 cup saltine crackers, crushed
  • 2 tablespoons butter, melted
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • pepper
  • paprika

Recipe

  • 1 in a bowl, beat eggs.
  • 2 stir in the corn, milk, cracker crumbs, butter, sugar, salt and pepper.
  • 3 pour into a greased 1-qt. microwave safe dish.
  • 4 cover and microwave at 70% power for 6-7 minutes or until a knife inserted near the center comes out clean.
  • 5 let stand for 5 minutes before serving.
  • 6 sprinkle with paprika.
