Dread Mon's Island Hot Wings

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 1 lb butter
  • 8 ounces jamaican jerk spice
  • 1/2 ounce tabasco sauce
  • 8 ounces tomato juice
  • 8 ounces unbleached flour
  • 5 lbs chicken wings or 5 lbs chicken drummettes, fresh not frozen
  • oil, for frying

Recipe

  • 1 jamaican jerk spice may be found in specialty food stores.
  • 2 melt the butter in a 2-quart sauce pot over low heat.
  • 3 add the jerk spice, tabasco sauce, and tomato juice.
  • 4 blend well and set aside.
  • 5 rinse the wings under cold running water and pat dry with paper towels.
  • 6 dust the wing with the flour and deep fry in a heavy pot or skillet in about 2-inches of hot oil until done.
  • 7 place the cooked wings in the sauce mixture and allow to marinate just a few minutes.
  • 8 drain off any excess liquid.
  • 9 serve immediately.
