cowboy kale

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 1 red pepper, thinly sliced
  • 1 green pepper, thinly sliced
  • 12 white mushrooms, halved
  • 4 green onions, sliced
  • 1 clove garlic, minced
  • 1 teaspoon sea salt
  • 1 large bunch kale, stems removed, chopped
  • 1 granny smith apple, shredded
  • 1 carrot, shredded
  • 1 teaspoon balsamic vinaigrette, or to taste

    Preparation Time: 25 mins Cook Time: 5 mins Ready Time: 30 mins

  • heat olive in a skillet over medium heat. saute red pepper, green pepper, mushrooms, green onions, garlic, and salt until tender but not soggy, 3 to 5 minutes. add kale and cook until wilted and tender, 1 to 2 minutes. add apple and shredded carrot, cook until warmed through, 1 to 2 minutes. sprinkle with balsamic vinaigrette.
