Dream Green Beans

Ingredients

- 1 lb fresh green beans, trimmed
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/2 sweet red pepper, seeded and diced
- 1/2 red onion, thinly sliced
- 1 tablespoon dijon mustard
- 1/4 cup fresh orange juice (not frozen)
- 2 teaspoons brown sugar
- 1/3 cup almonds, toasted and chopped
- 1 teaspoon fresh oregano
- salt and pepper
- 1 pinch hot pepper flakes (optional)
Recipe
- 1 to a medium pot of boiling water, add beans and cook just untl they are tender crisp - approximately 5 minutes.
- 2 meanwhile, melt butter and olive oil in a skillet over medium heat.
- 3 add red pepper and red onion and saute until the onions are soft, about 5 minutes.
- 4 whisk in dijon, orange juice and brown sugar.
- 5 stir in the oregano, almonds and drained green beans.
- 6 toss to coat beans and season to taste with salt and pepper.
