Dream Green Beans

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb fresh green beans, trimmed
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 sweet red pepper, seeded and diced
  • 1/2 red onion, thinly sliced
  • 1 tablespoon dijon mustard
  • 1/4 cup fresh orange juice (not frozen)
  • 2 teaspoons brown sugar
  • 1/3 cup almonds, toasted and chopped
  • 1 teaspoon fresh oregano
  • salt and pepper
  • 1 pinch hot pepper flakes (optional)

Recipe

  • 1 to a medium pot of boiling water, add beans and cook just untl they are tender crisp - approximately 5 minutes.
  • 2 meanwhile, melt butter and olive oil in a skillet over medium heat.
  • 3 add red pepper and red onion and saute until the onions are soft, about 5 minutes.
  • 4 whisk in dijon, orange juice and brown sugar.
  • 5 stir in the oregano, almonds and drained green beans.
  • 6 toss to coat beans and season to taste with salt and pepper.
