Dream Bars

Total Time: 2 hrs 10 mins Preparation Time: 1 hr 15 mins Cook Time: 55 mins

Ingredients

  • Servings: 8
  • 2 cups flour
  • 3/4 cup brown sugar
  • 1/2 cup pecans
  • 1/4 teaspoon salt
  • 10 tablespoons unsalted butter (cut into 1/2 inch pieces and chilled)
  • 1 1/2 cups sweetened flaked coconut
  • 1 cup cream of coconut
  • 2 large eggs
  • 3/4 cup brown sugar, packed
  • 2 tablespoons flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 cup pecans, toasted and roughly chopped

Recipe

  • 1 preheat oven to 350 degrees and place oven rack in the middle.
  • 2 line pan with foil and spray with non-stick spray.
  • 3 crust: mix everything except for the butter in a food processor till coarsely ground.
  • 4 add butter till consistency is coarse meal.
  • 5 press firmly into pan and bake for 20 min or until golden brown.
  • 6 cool for 20 minute.
  • 7 topping: combine coconuts in a bowl.
  • 8 in another bowl, whisk everything except for pecans till smooth.
  • 9 add pecans and pour filling over crust.
  • 10 dollup heaping tablespoons of coconut mixture onto filling.
  • 11 bake till golden brown, about 35-40 minutes.
  • 12 cool for 2 hours.
