Dirty Rice, Saturday Morning Special

Ingredients
- 1 1/2 cups long grain rice
- 3 cups water
- 1 tablespoon butter
- 1 chicken bouillon cube
- 1 teaspoon salt
- 1 lb mild sausage
- 1 small onion
- 1 red bell pepper
- 1 stalk celery
Recipe
- 1 place 3 cups of water and 1 t salt in a 5 quart pot. bring water to a boil and add 1 chicken bullion cube and one t of butter.
- 2 add 1 1/2 c long grain rice. bring water back to a boil, stirring constantly. turn heat down to a simmer and cover with lid. cook 15 minutes. let stand 10 minutes until all of the water has been absorbed.
- 3 chop onion, red pepper and celery. set aside.
- 4 in another skillet, brown sausage and add chopped vegetables to sausage. brown over medium heat for 5-10 minutes.
- 5 drain sausage/vegetable mixture well,.
- 6 combine the rice with the sausage mixture and stir, heating the mixture thoroughly.
- 7 add salt and pepper to taste.
- 8 * if you like the dirty rice spicier, you can add a few drops of your favorite hot sauce to taste.
- 9 ** in summer, you can add one or more medium tomatoes, chopped.
