- 2 lbs new potatoes, about 1 . 5-inch diameter
- 2 tablespoons extra-virgin olive oil
- 1/3 cup kalamata olive, pitted
Recipe
- 1 preheat oven to 400°f spread the potatoes on a large rimmed baking sheet, drizzle with the oil and toss the coat.
- 2 bake for about 45 minutes, until crisp and tender.
- 3 meanwhile, in a food processor, puree the olives. scrape the puree over the potatoes and toss well. serve hot, or at room temperature.
