Smashed Potatoes

Ingredients
- Servings: 6
- 6 potatoes, baked
- 6 tablespoons butter
- 1 cup cheddar cheese
- 1 cup bacon, cooked and crumbled
- 4 ounces mushrooms, drained (optional)
Recipe
- 1 in frypan heat butter.
- 2 place 1 potato on counter. using a bowl, smash down potato.
- 3 repeat with remaining potatoes.
- 4 fry on one side until golden and crispy, about 5 minutes.
- 5 flip.
- 6 put bacon and mushrooms over each potato.
- 7 add cheese to top of each potato.
- 8 fry another 5 minutes or until second side is golden and crispy and cheese is melted.
- 9 serve with sour cream or ranch dressing.
