Peach Salsa

Ingredients

  • Servings: 24
  • 8 ripe peaches, coarsely chopped (about 3 pounds)
  • 1 small red pepper, cut into 1/4 inch dice
  • 2 green onions, chopped
  • 1/4 cup peach jam or 1/4 cup apricot jam
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil

Recipe

  • 1 in large bowl, toss ingredients until combined.
  • 2 cover and refrigerate until ready to serve or up to two days.
