Russian Pickled Mushrooms

Ingredients
- Servings: 4
- 1/4 cup dry vinegar
- 1/4 cup red wine vinegar
- 3 tablespoons water
- 2 teaspoons olive oil
- 2 large garlic cloves, crushed
- 1 teaspoon sugar
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 12 ounces mushrooms, cut into quarters
Recipe
- 1 in a small saucepan, combine all ingredients, except for the mushrooms.
- 2 bring to a boil over medium heat and cook for 3 minutes.
- 3 add mushrooms and when mixture boils again continue to cook and stir, 1 minute more.
- 4 chill several hours or overnight to blend flavors.
- 5 serve cold.
- 6 preparation and cooking time does not include flavor blending time.
