Russian Pickled Mushrooms

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1/4 cup dry vinegar
  • 1/4 cup red wine vinegar
  • 3 tablespoons water
  • 2 teaspoons olive oil
  • 2 large garlic cloves, crushed
  • 1 teaspoon sugar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 12 ounces mushrooms, cut into quarters

Recipe

  • 1 in a small saucepan, combine all ingredients, except for the mushrooms.
  • 2 bring to a boil over medium heat and cook for 3 minutes.
  • 3 add mushrooms and when mixture boils again continue to cook and stir, 1 minute more.
  • 4 chill several hours or overnight to blend flavors.
  • 5 serve cold.
  • 6 preparation and cooking time does not include flavor blending time.
