Dirty Rice, Saturday Morning Special

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 1/2 cups long grain rice
  • 3 cups water
  • 1 tablespoon butter
  • 1 chicken bouillon cube
  • 1 teaspoon salt
  • 1 lb mild sausage
  • 1 small onion
  • 1 red bell pepper
  • 1 stalk celery

Recipe

  • 1 place 3 cups of water and 1 t salt in a 5 quart pot. bring water to a boil and add 1 chicken bullion cube and one t of butter.
  • 2 add 1 1/2 c long grain rice. bring water back to a boil, stirring constantly. turn heat down to a simmer and cover with lid. cook 15 minutes. let stand 10 minutes until all of the water has been absorbed.
  • 3 chop onion, red pepper and celery. set aside.
  • 4 in another skillet, brown sausage and add chopped vegetables to sausage. brown over medium heat for 5-10 minutes.
  • 5 drain sausage/vegetable mixture well,.
  • 6 combine the rice with the sausage mixture and stir, heating the mixture thoroughly.
  • 7 add salt and pepper to taste.
  • 8 * if you like the dirty rice spicier, you can add a few drops of your favorite hot sauce to taste.
  • 9 ** in summer, you can add one or more medium tomatoes, chopped.
