Ingredients
- 5 1/2 cups peach juice
- 1 package dry pectin
- 7 1/2 cups sugar
Recipe
- 1 combine juice and pectin in a large saucepot.
- 2 bring to a boil.
- 3 stir in sugar and return to a rolling boil.
- 4 boil hard 3 minutes, stirring constantly.
- 5 remove from heat.
- 6 skim foam if necessary.
- 7 ladle hot jelly into hot, sterile jars; 1/4" head.
- 8 process 5 minutes in boiling water canner.
- 9 about 8 half pints.
