Marmalade-glazed Carrots

Ingredients

- 1 lb baby carrots, scrubbed
- 1 tablespoon butter or 1 tablespoon margarine
- 1/4 cup orange marmalade
- 1 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- 1 tablespoon chopped parsley
- salt and pepper
Recipe
- 1 in a 10 inch frying pan over high heat, add water and carrots.
- 2 cover and bring to a boil then reduce heat to medium-high heat.
- 3 cook carrots for about 8 minutes or when fork tender.
- 4 don't forget to stir during cooking.
- 5 drain carrots.
- 6 return carrots to pan over high heat.
- 7 add butter, orange marmalade, ginger, and nutmeg.
- 8 stir often until marmalade mixture clings to carrots, 5 to 6 minutes.
- 9 sprinkle with parsley and add salt and pepper to taste.
