Down East Bread

Total Time: 3 hrs 30 mins Preparation Time: 30 mins Cook Time: 3 hrs

Ingredients

  • 2 (1/4 ounce) packages dry yeast
  • 1/2 cup lukewarm water
  • 1 tablespoon sugar
  • 3 cups lukewarm water
  • 1/2 cup cooking oil
  • 1 egg (beaten)
  • 1/3 cup sugar
  • 1 tablespoon salt
  • 9 cups flour (approximately)

Recipe

  • 1 using a large bowl,mix the first three ingredients together and allow to set for 10 minutes.
  • 2 add the remaining 3 cups water, oil, egg, sugar, and salt; mix well.
  • 3 then add 3 cups of the flour and mix well so the mixture will be smooth.
  • 4 then add 3 cups more of the flour, stirring again till smooth.
  • 5 keep on adding the flour until the dough is fairly stiff.
  • 6 knead 100 times.
  • 7 put into a greased bowl and cover to let rise till double.
  • 8 punch down and rise again till doubled in size.
  • 9 turn a lightly floured board and punch down and let rest for 10 minutes.
  • 10 knead for about 3 minutes and divide dough in thirds.
  • 11 make each third into a loaf and place in greased bread pan.
  • 12 rise till almost double.
  • 13 bake at 450 degrees for 10 minutes; lower the heat to 325 degees and bake for about 25 minutes longer.
  • 14 if they get too brown, put foil on top.
  • 15 take out of pans and put on racks with a clean dish towel over the top.
