Old Fashioned Sponge Candy

Total Time: 28 mins Preparation Time: 10 mins Cook Time: 18 mins

Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon vinegar
  • 1 cup corn syrup
  • 1 tablespoon baking soda

Recipe

  • 1 line the bottom and sides of a 9x9" square pan -- with aluminum foil -- butter foil and set aside.
  • 2 combine sugar, vinegar and corn syrup in a heavy pan --
  • 3 stir once over medium heat till sugar dissolves --
  • 4 heat until mixture reaches the hard crack stage or 290*-310* on candy thermometer.
  • 5 remove from heat, carefully stir in baking soda.mixture will foam quite high --
  • 6 pour mixture into prepared pans, set aside at room temperature until firm --
  • 7 invert pan to remove candy.
  • 8 peel foil off and break candy into small pieces --
  • 9 store in an airtight container at room temperature -- .
